Tea and Ice Cream = Yum!!!!

green tea ice creamTea and ice cream can be a great tasting combination. However, it is usually pretty hard to find any green tea ice cream or anything of that nature in a regular supermarket. But, it is actually possible to make your own tea flavored ice cream. Here is a great recipe for making your own tea flavored ice cream:

ingredients

  • 1.25 cups heavy cream
  • 1 cup milk
  • 1/3 cup sugar (or less depending on how sweet you want it)
  • 2 egg yolks
  • 2 tablespoons dry tea (green is very good)
  • 1-2 tablespoon boiling water
  • one half vanilla bean pod (optional)

(note: these are not precise measurements, because I usually just make ice cream without measuring much, don’t be scared to make some adjustments to the cream / milk ratio etc.)

  1. First brew the loose leaf tea leaves in 1-2 tablespoons of water, the longer you brew it the stronger taste you will get in the ice cream.
  2. combine milk, cream, and sugar in saucepan and heat until sugar dissolves and little bubbles start coming up on the side.
  3. Now, pour one cup of this mixture into a seperate bowl with the pre-whisked eggs. Make sure to whisk the eggs very quickly after combining the mixture, or else the eggs scramble. Now pour this mixture back into the original saucepan, while stirring.
  4. Now, cook on slow for around five minutes (maybe less). You do not want to let this boil! because the eggs will turn into little peices of scrambled eggs. If you see any little bubbles, quickly turn off the heat.
  5. You can now add the green tea mixture to the pan. Stir it well and then pour the whole thing through a seive into another container (to catch any peices of cooked egg and the tea leaves).

You should now let this mixture cool in the refrigerator or freezer. When the mixture has cooled don’t be afraid to try some, it will have the taste of your ice cream, so if it is not sweet enough you can still add some sugar. So now all you need to do is follow the instructions on your ice cream maker to create your homemade tea ice cream! ( This is the ice cream maker I have Lello ice cream maker, it is a little pricy but it is self refrigerating and I have had a good experience with it.)
